A quarter cow — or quarter beef share — is one-quarter of a butchered steer. It typically yields 100–150 lbs of packaged beef. For couples or small families who want the quality and value of buying direct from a farm without filling an entire large freezer, a quarter beef share is the perfect entry point.
Front Quarter vs. Hind Quarter
A quarter cow can come from either the front or the back of the animal, and the cuts you receive differ significantly:
- Hind quarter: Contains more premium cuts including sirloin, round steaks, T-bone, and NY strip. More expensive per pound.
- Front quarter: Contains more roasts, chuck, brisket, and rib steaks. Often less expensive but equally flavorful. Great for slow cooking and braising.
- Mixed quarter (split half): Many ranchers sell a "mixed quarter" which is actually half of a half — giving you an even distribution of all cuts from both front and back. This is the most popular option for variety.

Quarter cows typically sell for $4.50–$9.00 per pound hanging weight. The hanging weight for a quarter is usually 100–175 lbs. After adding butcher processing fees ($0.75–$1.25/lb), your total cost typically falls between $600–$1,400.
While the per-pound price is slightly higher than a whole or half, a quarter beef share still offers excellent value compared to retail, especially for premium cuts. And your total upfront investment is lower, making it accessible for most households.
How Much Freezer Space for a Quarter Cow?
A quarter cow requires approximately 2–4 cubic feet of freezer space. This fits easily in a standard top-freezer or side-by-side refrigerator freezer, especially if you clear some space. Many buyers find a quarter cow disappears from the freezer in just a few months of regular cooking.
